Very branched evergreen shrub, 1 meter tall, with small, linear, leathery leaves of a beautiful dark green, violet flowers that come together to form spike inflorescences at the apex of the branches. The whole plant is strongly scented. It grows spontaneously in the warm Mediterranean regions, but, due to its aromatic characteristics, it is grown everywhere. In ancient Greece young twigs of Rosemary were burned during religious ceremonies.
The essential oil is obtained from the leaves and from the flowering tops, with the method of steam distillation and a straw yellow liquid with a fresh and slightly camphorized fragrance is obtained.
