Annual herbaceous plant, sometimes perennial, which can reach one and a half meters in height with leaves divided into deep laciniae and yellow flowers that come together to form umbrella-like inflorescences. The fruit is composed of two oval achenes that have ribs in relief. Fennel grows spontaneously in the Mediterranean regions but, due to its culinary qualities, it is widely cultivated. Ancient folk medicine recommended its use for eye diseases and to increase the milk of new mothers.
The essential oil is obtained from plants with the steam distillation method and a straw yellow liquid with a rather sweet fragrance is obtained.
