Essential oils are extracted from different parts of plants, flowers, leaves, wood, resin and branches. Their consistency can range from very fluid to thick like syrup (sandalwood). Most essential oils evaporate completely when left in contact with the air. Each essential oil can contain over 100 different components.The volatile part is commonly called "terpenes of" and is presentin most essential oils, they are unsaturated hydrocarbons

They can be:
Alcohols: they give the oil low toxicity and safety of use (lavender, geranium, tea tree, neroli, rosewood).
Aldehydes: determine the scent of the plant (lemon, lemongrass, lemon balm).
Ketones: similar to aldehydes, they give the characteristic note to the essential oil, if they are present in quantity, as in hyssop and sage, they can be dangerous and must be used with great caution (ginger, peppermint, rosemary).
Foreign: they are present in small concentrations (clary sage and lavender).
